Coffeecake made cupcakes

Flavours: Sourcream coffeecake with a drizzle of royal icing

It's been a while since I wanted to try out this KAF coffeecake recipe. There are quite a few raving reviews on it, which tickles my tastebuds even more. My first taste of coffeecake was of Nate's family favourite recipe, which remains a secret. He used to make it every so often back when I was still in college. Since then, I just love coffeecakes and that cinnamon fragrance. Well, we both like spiced cakes so much that we used to add spices to a regular vanilla cake recipes. =p

When I baked these cakes last night, the whole house smells like cinnamon! <3 I was so happy when I took out my first batch of cupcakes out of the oven that I couldn't wait to get my hands on it and started munching!

So cinnamon-namon-ly good!

My First Wedding Cupcakes

Flavours:
Chocolate cupcake with vanilla swiss-meringue buttercream
Madagascar vanilla cupcake with vanilla swiss-meringue buttercream


These cupcakes were created as a present for the celebration of my best friend's parents' Silver Wedding anniversary. It was a nice, small, event that was held at the end of their church service, along with the pastor and congregations.

I made both vanilla and chocolate cupcakes with swiss-meringue buttercream. All of the decorations on the cupcakes were made by melting white chocolate, using real leaves as moulds and piping melted chocolate into desired shapes.

I was quite happy with how these cakes turned out, and I also received many compliments from my fellow Indonesians. The cupcakes stood out in the middle of the other food and desserts!







Anyway, my friend commented that the pictures don't look as nice as it looks in real life.

Anton's Grad Dinner

Flavour: Mango cupcake with creamcheese frosting

For his graduation present, I baked him mango cupcakes with cream cheese icing. He always loves mango-related food/drink like mango nectar or mango dessert at Sweet Avenue. The mango cupcake recipe I got from Garrett's Mango Lime Cupcakes, which turned out to be very good. It is a very dense cake, but moist. Make sure that you bake it enough in the oven or it will fall once you take it out of the oven.

The icing, I cheated again and used store-bought. I only have a Kitchen Aid Artisan series hand-mixer, which had been very good to me and my cakes. I'm still researching whether or not it is possible to make a firm buttercream using a hand-mixer. I failed once, and heard stories that a lot of hand-mixers are burnt out as buttercream mixture is very dense. I need to find that courage to try at least one more time, although I am afraid that when I try to make it my mixer will break down. If that happens then I will have to buy myself an expensive stand-mixer. I can't even start to imagine buying one! =(








Tiramisu Cheesecake

Who's jealous? =p So, Rei and I were just talking the other night and he asked if I knew how to make tiramisu cheesecake. And uninterestedly, I said no! The same night, my brother asked me if I could make him a tiramisu cheesecake for his potluck party. Immediately, I said, "sure I can look up for recipes in my cookbooks." =p

I had to do a trial run with this cake because I did an experiment and added my own twist to the recipe. The recipe I found in my baking book and the one I found online do not use ladyfingers as part of the filling. It was either to be lined vertically on the side of the cake, or make the ladyfingers as the crust of the cheesecake. But, to me, it isn't a tiramisu if it does not have those ladyfinger cookies or sponge cake soaked in a mixture of coffee and coffee liqueur. So I modified the recipe a little to my personal liking! =) Actually, I found a picture of tiramisu cheesecake from The Cheesecake Factory website, and they also incorporated the ladyfingers as part of the filling.





I'll post the recipes tomorrow. I'm too tired!

LOOK! My 2nd attempt at making chocolate curls! I used the amateur techniques using a vegetable peeler, and my peeler isn't that long; hence, the short curls. Not too bad, though still not very clean. But I'm pretty satisfied and will keep on practicing! ^^



I hate how that white buttercream looks on my cake! I regretted doing that. It looks like ice cream!

What a Hoot! Cupcakes

Flavour: Chocolate cupcake with chocolate frosting

I purchased this super-fun and super-famous cupcake book recently from Amazon: "Hello, Cupcake!" by Karen Tack and Alan Richardson. I've had my eyes on that book for the longest time ever, that every time I visit Chapters I would go over to the cookbook section to flip a few pages of this book. I bought them from Amazon because it's way cheaper although I had to face the long and unbearable pain of waiting for the book to arrive.. which took about a week and a half, not that long after all. I guess I was exaggerating, but I'm glad that I finally have that book.

The previous cupcake design was also inspired by this book, although I had different writings on the cupcake. I decided to make the owl cupcake next because I think it's quite easy, as I'm still a beginner at cupcake/cake decorating. And it was quite easy and I enjoyed it a lot.

On top of that, the real reason why I baked these cupcakes were to cheer up my dear friend, whose name I won't mention here. =p I also gave these away to another one of my close friend and to my mom.

The beginning of cupcake madness!

Flavour: White confetti cupcake with vanilla buttercream

Oh no, the cupcakes got me too! After leaving my baking pans in the drawer for so long, I finally dusted them off and started baking again. This time, my heart belongs to those cute cupcakes; although I still bake cheesecake because both my mom and brother always request that.

Anyway, I baked these cupcakes for the youth service at my church. A lot of people could not come *sad* but I'm glad those who did loved them! Although I cheated by using cake mix and store-bought icing, they tasted good. I always like cakes that aren't too sweet, and this Confetti White Cake from Duncan Hines was just perfect and was very moist. It tasted like "kue bolu" in Indonesia.

The icing is kind of messy though because I only had about 1 hour on Saturday morning to do it as I had to prepare for the service itself. However, it was a nice comeback for me!
