For his graduation present, I baked him mango cupcakes with cream cheese icing. He always loves mango-related food/drink like mango nectar or mango dessert at Sweet Avenue. The mango cupcake recipe I got from Garrett's Mango Lime Cupcakes, which turned out to be very good. It is a very dense cake, but moist. Make sure that you bake it enough in the oven or it will fall once you take it out of the oven.
The icing, I cheated again and used store-bought. I only have a Kitchen Aid Artisan series hand-mixer, which had been very good to me and my cakes. I'm still researching whether or not it is possible to make a firm buttercream using a hand-mixer. I failed once, and heard stories that a lot of hand-mixers are burnt out as buttercream mixture is very dense. I need to find that courage to try at least one more time, although I am afraid that when I try to make it my mixer will break down. If that happens then I will have to buy myself an expensive stand-mixer. I can't even start to imagine buying one! =(
